Roast Goose:
Take 2 goose breasts, wrap them in bacon for
added fat. place the breasts in a roasting pan. Cut up potatoes,
carrots, onions, mushrooms, and whatever else you like and place into pan on
and around the breasts. Season to taste with salt, pepper, garlic.
Place in oven at 350 deg. for 1 hour and a half or until done. When
cooked thru serve.

~ 1 - 2 ducks
~ 3 bottles (2 liter) ginger ale, divided

Preheat oven to 350 degrees.
Place ducks in a roaster that has a lid.
Pour ginger ale over the top. Cover and cook for 1 hour.
Pour off all of the juices and ginger ale. Pour fresh ginger ale
over duck.
Do this about 5 times during a 4 hour period.
If the duck doesn't brown, drain the ginger ale, add fresh. Cook
the last 30 minutes with lid removed. Makes a sweet crispy
coating.
